Ingredients
- 1 tablespoon vegetable oil
- 1 pound chicken breast, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
- 1 cup chicken broth
- 8 corn tortillas
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Heat 1 tablespoon of vegetable oil in a large pot over medium-high heat.
- Add 1 pound diced chicken breast to the pot and cook until lightly browned but not cooked through, about 5 minutes.
- Stir in 1 finely chopped onion and 2 minced garlic cloves. Cook until the onion is translucent, around 3-4 minutes.
- Add 1 chopped green bell pepper and 1 chopped red bell pepper to the pot. Cook for another 3 minutes, stirring occasionally.
- Mix in 2 diced tomatoes, 1 tablespoon ground cumin, 1 teaspoon paprika, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon chili powder.
- Pour in 1 cup chicken broth. Stir well and bring the mixture to a simmer. Reduce the heat to low and cover the pot. Let it cook for 20 minutes, stirring occasionally.
- Heat a frying pan over medium heat. Warm the 8 corn tortillas by placing them in the pan for about 30 seconds per side. Keep them warm under a towel.
- To serve, place a generous spoonful of the chicken mixture onto each tortilla, sprinkle with chopped fresh cilantro, and squeeze a lime wedge over the top for added flavor.
