Ingredients

  • 1 lb (450 g) medium shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled queso fresco
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, mix together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper.
  2. Add the shrimp to the bowl and gently stir until they are well coated with the marinade. Let them marinate for about 10 minutes.
  3. While the shrimp marinate, prepare your toppings. Shred the cabbage, chop the cilantro, and crumble the queso fresco.
  4. Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side or until they are pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
  5. While cooking the shrimp, you can warm the tortillas. Wrap them in a damp paper towel and microwave for about 30 seconds, or heat them in a dry skillet for 30 seconds on each side.
  6. Assemble the tacos. Place a few shrimp on each tortilla, then top with shredded cabbage, cilantro, and queso fresco. Squeeze lime juice over the top for an added burst of flavor.
