Ingredients
- 1 lb (450 g) medium shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled queso fresco
- 1 lime, cut into wedges
Instructions
- In a large bowl, mix together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper.
- Add the shrimp to the bowl and gently stir until they are well coated with the marinade. Let them marinate for about 10 minutes.
- While the shrimp marinate, prepare your toppings. Shred the cabbage, chop the cilantro, and crumble the queso fresco.
- Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side or until they are pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
- While cooking the shrimp, you can warm the tortillas. Wrap them in a damp paper towel and microwave for about 30 seconds, or heat them in a dry skillet for 30 seconds on each side.
- Assemble the tacos. Place a few shrimp on each tortilla, then top with shredded cabbage, cilantro, and queso fresco. Squeeze lime juice over the top for an added burst of flavor.
