Ingredients

  • 2 pounds pork shoulder, thinly sliced
  • 2 tablespoons achiote paste
  • 1/4 cup white vinegar
  • 1/4 cup pineapple juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup fresh pineapple, sliced into small pieces
  • 8 corn tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced onions
  • 1 lime, cut into wedges

Instructions

  1. In a mixing bowl, combine the achiote paste, vinegar, pineapple juice, chili powder, cumin, oregano, garlic, salt, and pepper. Stir until well mixed.
  2. Place the pork slices in a large resealable plastic bag or a shallow dish and pour the marinade over the pork. Ensure all pieces are well-coated. Refrigerate for at least 2 hours, or overnight if possible for better flavor.
  3. Preheat your grill or skillet over medium-high heat to approximately 375°F. If using a grill, lightly oil the grill grates before grilling.
  4. Remove the marinated pork from the refrigerator and drain excess marinade. Grill the pork slices on the preheated grill, flipping occasionally, for about 15-20 minutes or until fully cooked.
  5. During the last few minutes of grilling, add the pineapple slices to the grill and cook for 3-4 minutes on each side until they are caramelized and lightly charred.
  6. Warm the corn tortillas on the grill for about 20-30 seconds on each side, or until soft and pliable.
  7. Slice the grilled pork and pineapple into small, bite-sized pieces. Assemble the tacos by placing a portion of pork and pineapple onto each tortilla.
  8. Garnish the tacos with chopped cilantro, diced onions, and a squeeze of lime juice. Serve immediately and enjoy your Tacos al Pastor.
