Ingredients
- 2 pounds pork shoulder, thinly sliced
- 2 tablespoons achiote paste
- 1/4 cup white vinegar
- 1/4 cup pineapple juice
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup fresh pineapple, sliced into small pieces
- 8 corn tortillas
- 1/4 cup chopped fresh cilantro
- 1/2 cup diced onions
- 1 lime, cut into wedges
Instructions
- In a mixing bowl, combine the achiote paste, vinegar, pineapple juice, chili powder, cumin, oregano, garlic, salt, and pepper. Stir until well mixed.
- Place the pork slices in a large resealable plastic bag or a shallow dish and pour the marinade over the pork. Ensure all pieces are well-coated. Refrigerate for at least 2 hours, or overnight if possible for better flavor.
- Preheat your grill or skillet over medium-high heat to approximately 375°F. If using a grill, lightly oil the grill grates before grilling.
- Remove the marinated pork from the refrigerator and drain excess marinade. Grill the pork slices on the preheated grill, flipping occasionally, for about 15-20 minutes or until fully cooked.
- During the last few minutes of grilling, add the pineapple slices to the grill and cook for 3-4 minutes on each side until they are caramelized and lightly charred.
- Warm the corn tortillas on the grill for about 20-30 seconds on each side, or until soft and pliable.
- Slice the grilled pork and pineapple into small, bite-sized pieces. Assemble the tacos by placing a portion of pork and pineapple onto each tortilla.
- Garnish the tacos with chopped cilantro, diced onions, and a squeeze of lime juice. Serve immediately and enjoy your Tacos al Pastor.
