  • 8 small corn tortillas

  • 1 red onion, finely diced
  • 1 cup crumbled queso fresco or feta cheese
  • Lime wedges for serving

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper to create the marinade.
  2. Place the flank steak in a shallow dish or a resealable plastic bag and pour the marinade over the steak. Ensure the steak is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat your grill or grill pan to a medium-high heat, around 400-450°F.
  4. Remove the steak from the marinade and shake off any excess. Place on the grill and cook for about 6-7 minutes per side for medium-rare, or until your desired doneness is reached.
