Ingredients

  • 2 (6-ounce) swordfish steaks
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Preheat your grill or stovetop grill pan to medium-high heat (about 375°F).
  2. Pat the swordfish steaks dry with paper towels to remove excess moisture. This helps in achieving a good sear, which locks in the flavor.
  3. In a small bowl, mix the olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper.
  4. Brush both sides of the swordfish steaks generously with the lemon and olive oil mixture.
  5. Place the swordfish steaks on the preheated grill or pan. Cook for 4-5 minutes on each side, or until the internal temperature reaches 145°F. Swordfish is a firm fish, and you’ll know it’s done when it’s opaque and flakes easily with a fork.
  6. While the swordfish is cooking, keep an eye on the grill or pan heat. If it seems too hot, lower the temperature slightly to avoid burning.
  7. Once cooked, transfer the swordfish steaks to a plate and let them rest for a couple of minutes. Resting allows the juices to redistribute within the fish, ensuring it remains moist.
  8. Sprinkle the freshly chopped parsley over the swordfish steaks for a fresh, herby flavor.
  9. Serve the swordfish with additional lemon wedges on the side for extra zing.
