Ingredients

  • 4 large flour tortillas
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 packet (1 ounce) taco seasoning
  • 1 cup rice, cooked
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil and ground beef. Cook until browned, about 5-7 minutes, breaking the meat into small pieces with a wooden spoon as it cooks.
  2. Drain excess fat from the skillet. Stir in the taco seasoning and 1/4 cup water. Simmer for 3-5 minutes until the mixture thickens. Taste and adjust seasoning with salt and pepper if necessary.
  3. While the beef is cooking, cook the rice according to package instructions. This will usually take about 15 minutes.
  4. Preheat your oven to 350°F. Lay the flour tortillas on a clean surface and start assembling the burritos.
  5. On each tortilla, layer equal portions of cooked rice, seasoned beef, black beans, cheese, salsa, and diced tomatoes.
  6. Roll the burritos tightly by folding in the sides of the tortilla over the filling, then rolling from the bottom up. Place seam-side down on a baking sheet.
  7. Bake in the preheated oven for 10-15 minutes until the burritos are heated through and the cheese is melted.
  8. Remove from oven and let them cool slightly. Serve with sour cream, avocado slices, and a sprinkle of fresh cilantro.
  9. Make sure not to overfill the burritos to prevent tearing. Use foil to wrap the burritos if you need extra support while baking.
