Ingredients
- 4 large flour tortillas
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 packet (1 ounce) taco seasoning
- 1 cup rice, cooked
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1 medium tomato, diced
- 1/2 cup sour cream
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat. Add olive oil and ground beef. Cook until browned, about 5-7 minutes, breaking the meat into small pieces with a wooden spoon as it cooks.
- Drain excess fat from the skillet. Stir in the taco seasoning and 1/4 cup water. Simmer for 3-5 minutes until the mixture thickens. Taste and adjust seasoning with salt and pepper if necessary.
- While the beef is cooking, cook the rice according to package instructions. This will usually take about 15 minutes.
- Preheat your oven to 350°F. Lay the flour tortillas on a clean surface and start assembling the burritos.
- On each tortilla, layer equal portions of cooked rice, seasoned beef, black beans, cheese, salsa, and diced tomatoes.
- Roll the burritos tightly by folding in the sides of the tortilla over the filling, then rolling from the bottom up. Place seam-side down on a baking sheet.
- Bake in the preheated oven for 10-15 minutes until the burritos are heated through and the cheese is melted.
- Remove from oven and let them cool slightly. Serve with sour cream, avocado slices, and a sprinkle of fresh cilantro.
- Make sure not to overfill the burritos to prevent tearing. Use foil to wrap the burritos if you need extra support while baking.
