Ingredients
- 8 medium squid, cleaned
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 lemon, zested and juiced
- Salt and pepper to taste
- 1/2 cup dry white wine
Instructions
- Preheat your oven to 350°F (175°C). Line a baking dish with foil or parchment paper for easier cleanup.
- Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
- Add the minced garlic to the pan and cook for an additional minute, being careful not to let it burn.
- In a mixing bowl, combine the sautéed onion and garlic, breadcrumbs, Parmesan cheese, parsley, basil, lemon zest, and half of the lemon juice. Mix well and season with salt and pepper to taste.
- Carefully stuff each squid with the breadcrumb mixture, leaving some room at the top. Secure the ends with a toothpick to keep the stuffing inside. Don’t overfill, as the stuffing will expand.
- In the same frying pan, heat the remaining tablespoon of olive oil over medium heat. Sear the stuffed squid for about 2-3 minutes on each side until lightly browned.
- Transfer the squid to the prepared baking dish. Pour in the white wine and the remaining lemon juice over the squid.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the squid is tender.
- Remove the foil during the last 5 minutes of cooking to allow the top to brown slightly.
