- 1 whole lamb breast, approximately 2 pounds
- 1 cup breadcrumbs
- 1/4 cup finely chopped fresh parsley
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 cloves garlic, minced
- 1 lemon, zest only
- 1/4 cup chicken stock
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the breadcrumbs, parsley, olive oil, salt, pepper, oregano, thyme, minced garlic, and lemon zest. Mix well to create the stuffing mixture.
- Lay the lamb breast flat on a clean surface with the fat side down. Spread the stuffing mixture evenly over the meat, leaving a small border around the edges.
