Ingredients

  • 1 whole lamb breast, approximately 2 pounds
  • 1 cup breadcrumbs
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • 1 lemon, zest only
  • 1/4 cup chicken stock

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the breadcrumbs, parsley, olive oil, salt, pepper, oregano, thyme, minced garlic, and lemon zest. Mix well to create the stuffing mixture.
  3. Lay the lamb breast flat on a clean surface with the fat side down. Spread the stuffing mixture evenly over the meat, leaving a small border around the edges.
