Ingredients

  • 1 lb flank steak
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup canned refried beans
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat a grill or a skillet to medium-high heat (about 400°F).
  2. In a small bowl, mix together the salt, black pepper, paprika, garlic powder, and onion powder.
  3. Rub the spice mixture evenly over the flank steak on both sides.
  4. Drizzle the olive oil onto the grill or skillet, and carefully place the steak onto the hot surface.
  5. Cook the steak for about 5-6 minutes on each side for medium-rare or until your desired level of doneness is reached. Use a meat thermometer if needed; it should read approximately 135°F for medium-rare.
  6. Transfer the cooked steak to a cutting board and let it rest for 5 minutes before slicing.
  7. Slice the steak thinly against the grain. This ensures the meat stays tender and easy to chew.
  8. Warm the flour tortillas in a dry skillet or microwave for about 30 seconds, making them more pliable and easier to wrap.
  9. To assemble the burritos, lay a tortilla flat and spread 1/4 cup of refried beans onto the center.
  10. Add a few slices of steak, 1/4 cup of cooked rice, 1/4 cup of shredded cheese, a tablespoon of salsa, and a tablespoon of sour cream on top of the beans.
  11. Sprinkle with chopped cilantro and a squeeze of lime juice if desired.
  12. Fold the sides of the tortilla over the filling, then roll the tortilla from the bottom to the top to enclose all ingredients securely. Repeat for the remaining tortillas.
