Ingredients
- 1 lb flank steak
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup canned refried beans
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Preheat a grill or a skillet to medium-high heat (about 400°F).
- In a small bowl, mix together the salt, black pepper, paprika, garlic powder, and onion powder.
- Rub the spice mixture evenly over the flank steak on both sides.
- Drizzle the olive oil onto the grill or skillet, and carefully place the steak onto the hot surface.
- Cook the steak for about 5-6 minutes on each side for medium-rare or until your desired level of doneness is reached. Use a meat thermometer if needed; it should read approximately 135°F for medium-rare.
- Transfer the cooked steak to a cutting board and let it rest for 5 minutes before slicing.
- Slice the steak thinly against the grain. This ensures the meat stays tender and easy to chew.
- Warm the flour tortillas in a dry skillet or microwave for about 30 seconds, making them more pliable and easier to wrap.
- To assemble the burritos, lay a tortilla flat and spread 1/4 cup of refried beans onto the center.
- Add a few slices of steak, 1/4 cup of cooked rice, 1/4 cup of shredded cheese, a tablespoon of salsa, and a tablespoon of sour cream on top of the beans.
- Sprinkle with chopped cilantro and a squeeze of lime juice if desired.
- Fold the sides of the tortilla over the filling, then roll the tortilla from the bottom to the top to enclose all ingredients securely. Repeat for the remaining tortillas.
