Ingredients
- 4 large sausage links (Italian or Chorizo preferred)
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Preheat your grill to medium-high heat, approximately 400°F.
- In a mixing bowl, combine olive oil, red pepper flakes, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well to create a marinade.
- Place the sausages on a plate and use a brush to coat them with the marinade evenly. Make sure to roll the sausages around so they get nicely covered with the spice mixture.
- Place the sausages on the preheated grill. Remember to use tongs and handle them carefully so they don’t puncture, which could cause juices to escape, resulting in dry sausages.
- Grill the sausages for about 10 minutes on one side, then carefully turn them over using the tongs and grill for another 10 minutes. Total cooking time is approximately 20 minutes, or until the sausages are cooked through with an internal temperature of 160°F.
- As you grill, occasionally brush the sausages with any leftover marinade for extra flavor.
- Once cooked, remove the sausages from the grill and let them rest for a couple of minutes so the juices settle back in, making the sausages juicy.
- Garnish with freshly chopped parsley if desired. Serve the sausages hot, either alone or in a bun with your favorite condiments.
- Tip: If you’re using a grill, you can add soaked wood chips to give the sausages a smoky flavor. Just make sure to soak the wood chips in water for at least 30 minutes before grilling.
