Ingredients
- 12 oz (340g) spaghetti
- 2 cans (5 oz each) tuna in olive oil, drained
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil. Once it reaches a rolling boil, add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Remember to stir occasionally to prevent sticking.
- While the pasta is cooking, place a large skillet over medium heat. Add the olive oil and minced garlic. Cook the garlic for about 1-2 minutes, stirring constantly, until it becomes fragrant and slightly golden. Avoid letting it brown too much as it can turn bitter.
- Add the drained tuna to the skillet and break it up gently with a spoon. If you like a spicy kick, add the red pepper flakes at this stage. Stir everything together and continue to cook for another 3 minutes until the tuna is heated through.
- Once the pasta is al dente, reserve 1 cup of the pasta cooking water, then drain the spaghetti. You can reserve the water by dipping a mug into the pot before draining the pasta.
- Add the cooked spaghetti directly to the skillet with the tuna mixture. Pour in the reserved pasta water little by little as needed to help combine everything and create a light sauce.
- Stir in the lemon juice, and season the dish with salt and pepper to taste. Toss everything well to ensure the spaghetti is evenly coated with the tuna mixture.
- Once well combined, remove the skillet from the heat, and stir in the fresh parsley.
