Ingredients

  • 12 oz (340g) spaghetti
  • 2 cans (5 oz each) tuna in olive oil, drained
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil. Once it reaches a rolling boil, add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Remember to stir occasionally to prevent sticking.
  2. While the pasta is cooking, place a large skillet over medium heat. Add the olive oil and minced garlic. Cook the garlic for about 1-2 minutes, stirring constantly, until it becomes fragrant and slightly golden. Avoid letting it brown too much as it can turn bitter.
  3. Add the drained tuna to the skillet and break it up gently with a spoon. If you like a spicy kick, add the red pepper flakes at this stage. Stir everything together and continue to cook for another 3 minutes until the tuna is heated through.
  4. Once the pasta is al dente, reserve 1 cup of the pasta cooking water, then drain the spaghetti. You can reserve the water by dipping a mug into the pot before draining the pasta.
  5. Add the cooked spaghetti directly to the skillet with the tuna mixture. Pour in the reserved pasta water little by little as needed to help combine everything and create a light sauce.
  6. Stir in the lemon juice, and season the dish with salt and pepper to taste. Toss everything well to ensure the spaghetti is evenly coated with the tuna mixture.
  7. Once well combined, remove the skillet from the heat, and stir in the fresh parsley.
