Ingredients

  • 1 lb spaghetti
  • 2 lbs fresh mussels, cleaned and debearded
  • 4 tablespoons olive oil
  • 5 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup white wine
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Cook for about 1-2 minutes, until the garlic is fragrant and lightly golden, being careful not to burn it.
  3. Add the mussels to the pan and pour in the white wine. Cover the pan with a lid and cook for about 5 minutes, or until the mussels have opened. Discard any mussels that remain closed.
  4. Reduce heat to medium-low. Stir in the lemon juice and half of the chopped parsley.
  5. Add the cooked spaghetti to the pan. Toss everything together gently to combine, adding reserved pasta water a little at a time to help create a sauce and to achieve your desired consistency.
  6. Season with salt and pepper to taste. Sprinkle with the remaining parsley before serving.
  7. Serve immediately with lemon wedges on the side, if desired.
