Ingredients
- 1 lb spaghetti
- 2 lbs fresh mussels, cleaned and debearded
- 4 tablespoons olive oil
- 5 garlic cloves, minced
- 1/2 teaspoon red pepper flakes
- 1 cup white wine
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Lemon wedges, for serving (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Cook for about 1-2 minutes, until the garlic is fragrant and lightly golden, being careful not to burn it.
- Add the mussels to the pan and pour in the white wine. Cover the pan with a lid and cook for about 5 minutes, or until the mussels have opened. Discard any mussels that remain closed.
- Reduce heat to medium-low. Stir in the lemon juice and half of the chopped parsley.
- Add the cooked spaghetti to the pan. Toss everything together gently to combine, adding reserved pasta water a little at a time to help create a sauce and to achieve your desired consistency.
- Season with salt and pepper to taste. Sprinkle with the remaining parsley before serving.
- Serve immediately with lemon wedges on the side, if desired.
