Ingredients

  • 1 pound spaghetti
  • 3 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 2 pounds fresh clams, scrubbed and soaked in cold water
  • 1/2 cup dry white wine
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Lemon wedges for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes until the garlic is fragrant but not brown.
  3. Add the clams to the skillet and pour in the white wine. Increase the heat to high and cover the skillet.
  4. Cook the clams for about 5-7 minutes, shaking the pan occasionally, until the clams open. Discard any clams that do not open.
  5. Drain the spaghetti, reserving 1 cup of the pasta water. Add the spaghetti to the skillet with the clams.
  6. If the mixture seems dry, add some reserved pasta water, a little at a time, tossing until the spaghetti is coated in the sauce.
  7. Season with salt and freshly cracked black pepper. Mix in chopped parsley.
