Ingredients
- 1 pound spaghetti
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 2 pounds fresh clams, scrubbed and soaked in cold water
- 1/2 cup dry white wine
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Freshly cracked black pepper, to taste
- Lemon wedges for serving
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes until the garlic is fragrant but not brown.
- Add the clams to the skillet and pour in the white wine. Increase the heat to high and cover the skillet.
- Cook the clams for about 5-7 minutes, shaking the pan occasionally, until the clams open. Discard any clams that do not open.
- Drain the spaghetti, reserving 1 cup of the pasta water. Add the spaghetti to the skillet with the clams.
- If the mixture seems dry, add some reserved pasta water, a little at a time, tossing until the spaghetti is coated in the sauce.
- Season with salt and freshly cracked black pepper. Mix in chopped parsley.
