Ingredients

  • 2 (4-6 oz each) sole fillets
  • 1/4 cup all-purpose flour
  • Salt and black pepper, to taste
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Pat the sole fillets dry with paper towels to ensure a good sear. Season both sides of the fillets with salt and black pepper.
  2. Place the flour on a large plate. Dredge the fillets lightly in the flour, shaking off any excess. This will help create a thin, crispy coating.
  3. In a large skillet, melt 2 tablespoons of the butter over medium-high heat. Wait until the butter sizzles and has a nutty aroma, but don’t let it burn.
  4. Gently place the fillets in the skillet. Cook for about 2-3 minutes on each side, or until they are golden brown. Use a spatula to carefully flip the fish halfway through cooking.
  5. Remove the fish from the skillet and place them on a warm serving plate. Tent with foil to keep the fillets warm.
  6. Reduce the heat to medium. Add the remaining butter to the skillet. Allow it to melt and continue cooking until it turns a light golden brown color, a process known as ‘beurre noisette.’
  7. Remove the skillet from heat and add the lemon juice carefully, as it may splatter. Stir quickly to combine this sauce, then add the chopped parsley.
  8. Pour the sauce over the fish fillets. Serve immediately with lemon wedges on the side for extra zest.
