Ingredients
- 2 (4-6 oz each) sole fillets
- 1/4 cup all-purpose flour
- Salt and black pepper, to taste
- 4 tablespoons unsalted butter
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Pat the sole fillets dry with paper towels to ensure a good sear. Season both sides of the fillets with salt and black pepper.
- Place the flour on a large plate. Dredge the fillets lightly in the flour, shaking off any excess. This will help create a thin, crispy coating.
- In a large skillet, melt 2 tablespoons of the butter over medium-high heat. Wait until the butter sizzles and has a nutty aroma, but don’t let it burn.
- Gently place the fillets in the skillet. Cook for about 2-3 minutes on each side, or until they are golden brown. Use a spatula to carefully flip the fish halfway through cooking.
- Remove the fish from the skillet and place them on a warm serving plate. Tent with foil to keep the fillets warm.
- Reduce the heat to medium. Add the remaining butter to the skillet. Allow it to melt and continue cooking until it turns a light golden brown color, a process known as ‘beurre noisette.’
- Remove the skillet from heat and add the lemon juice carefully, as it may splatter. Stir quickly to combine this sauce, then add the chopped parsley.
- Pour the sauce over the fish fillets. Serve immediately with lemon wedges on the side for extra zest.
