Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are completely dry to help them sear properly.
  2. In a large non-stick skillet, heat the olive oil over medium-high heat for about 2 minutes. You can test the heat by flicking a little water into the pan – if it sizzles, the oil is ready.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
  4. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, or until they turn pink and opaque halfway through. Then, flip the shrimp over using tongs.
  5. Pour the lemon juice and zest over the shrimp. Sprinkle with salt and black pepper. Stir gently to coat the shrimp evenly in the lemon and garlic mixture.
  6. Continue to cook for another 2-3 minutes, or until the shrimp are fully cooked and curled into a C shape. Avoid overcooking, as this will make them tough.
  7. Remove from heat and stir in the chopped parsley. Transfer the shrimp to a serving dish.
  8. Serve immediately with lemon wedges for an extra burst of citrus flavor.
