Ingredients
- 1 pound shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are completely dry to help them sear properly.
- In a large non-stick skillet, heat the olive oil over medium-high heat for about 2 minutes. You can test the heat by flicking a little water into the pan – if it sizzles, the oil is ready.
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, or until they turn pink and opaque halfway through. Then, flip the shrimp over using tongs.
- Pour the lemon juice and zest over the shrimp. Sprinkle with salt and black pepper. Stir gently to coat the shrimp evenly in the lemon and garlic mixture.
- Continue to cook for another 2-3 minutes, or until the shrimp are fully cooked and curled into a C shape. Avoid overcooking, as this will make them tough.
- Remove from heat and stir in the chopped parsley. Transfer the shrimp to a serving dish.
- Serve immediately with lemon wedges for an extra burst of citrus flavor.
