Ingredients
- 2 tablespoons olive oil
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 pound large shrimp, peeled and deveined
- 1/4 cup Cognac
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges for serving (optional)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Add the chopped shallot to the skillet and sauté until translucent, about 2-3 minutes.
- Stir in the minced garlic and continue to cook for an additional 30 seconds.
- Increase the heat to medium-high and add the shrimp to the skillet. Cook until the shrimp turn pink, about 3 minutes per side.
- Carefully add 1/4 cup cognac to the skillet and let it simmer for 1-2 minutes, allowing the alcohol to cook off.
- Reduce the heat to medium and stir in 1/2 cup of heavy cream, stirring constantly until the sauce thickens, about 3-5 minutes.
- Season the dish with salt and pepper according to taste and sprinkle freshly chopped parsley over the top.
- Serve immediately with lemon wedges on the side if desired.
