Ingredients

  • 2 tablespoons olive oil
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup Cognac
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add the chopped shallot to the skillet and sauté until translucent, about 2-3 minutes.
  3. Stir in the minced garlic and continue to cook for an additional 30 seconds.
  4. Increase the heat to medium-high and add the shrimp to the skillet. Cook until the shrimp turn pink, about 3 minutes per side.
  5. Carefully add 1/4 cup cognac to the skillet and let it simmer for 1-2 minutes, allowing the alcohol to cook off.
  6. Reduce the heat to medium and stir in 1/2 cup of heavy cream, stirring constantly until the sauce thickens, about 3-5 minutes.
  7. Season the dish with salt and pepper according to taste and sprinkle freshly chopped parsley over the top.
  8. Serve immediately with lemon wedges on the side if desired.
