Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh oregano, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon parsley, chopped for garnish
  • Lemon wedges for serving

Instructions

  1. First, preheat your oven to 400 degrees Fahrenheit. It needs to be nice and warm for our shrimp.
  2. In a mixing bowl, combine the breadcrumbs, Parmesan cheese, and chopped oregano. Toss in the minced garlic.
  3. Drizzle in the olive oil and lemon juice. Give it a good stir until it all looks like a sandy little beach.
  4. Now, lay those lovely shrimp in a baking dish. Season them gently with salt and a dash of black pepper.
  5. Spoon the breadcrumb mixture over the shrimp. Spread it around so it covers ’em up nice and even.
  6. Pop the dish in your preheated oven. Let it bake for about 10 minutes. You’ll know it’s ready when the shrimp are opaque and the top is slightly golden.
  7. When everything’s looking just right, take it out of the oven. Sprinkle a bit of parsley over the top for a dash of green.
  8. Serve it up with wedges of lemon on the side. A little squeeze before you dig in will brighten things up just so.
