Ingredients
- 8 ounces chow mein noodles
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 medium onion, sliced
- 1 cup bell peppers, sliced (red, green, or yellow)
- 1 cup snap peas
- 2 carrots, julienned
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch, mixed with 2 tablespoons water
- 1/4 teaspoon ground black pepper
- 2 green onions, chopped for garnish
- 1 tablespoon sesame seeds, for garnish
Instructions
- Start by boiling a pot of water and cooking the chow mein noodles according to package instructions until just tender. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and stir-fry until pink and cooked through, about 2 to 3 minutes. Remove the shrimp from the wok and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the sliced onion and stir-fry for 1 minute until it begins to soften.
- Add the bell peppers, snap peas, and carrots to the skillet. Continue to stir-fry for 3 to 5 minutes until the vegetables are tender-crisp.
- Add the minced garlic to the vegetable mixture and sauté for 30 seconds until fragrant. Be careful not to burn the garlic.
- Return the cooked shrimp to the skillet and add the drained chow mein noodles. Toss everything together gently.
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, cornstarch slurry, and ground black pepper. Pour this sauce over the noodle mixture. Stir well to combine and heat for 2 minutes until the sauce thickens slightly and everything is well coated.
- Taste and adjust seasoning if necessary. Once done, turn off the heat and garnish with chopped green onions and sesame seeds before serving.
