Ingredients
- 1 lb medium-sized shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup cooked white rice
- 1 cup black beans, drained and rinsed
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/2 cup shredded cheddar cheese
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 4 large flour tortillas
Instructions
- Start by preparing the shrimp. In a large bowl, combine the shrimp with olive oil, chili powder, paprika, cumin, cayenne pepper, garlic powder, salt, and pepper. Mix until the shrimp are well coated. Tip: Wear kitchen gloves when mixing to avoid staining your hands with spices.
- Preheat a large skillet over medium-high heat. Once hot, add the seasoned shrimp. Cook for about 3-4 minutes on each side or until they turn pink and opaque. Make sure not to overcook the shrimp, as they can become rubbery.
- While the shrimp are cooking, warm the tortillas in a dry skillet over low heat for about 30 seconds on each side or wrap them in a damp paper towel and heat in the microwave for 20 seconds. This makes them pliable and easier to fold.
- To assemble the burritos, lay a warm tortilla flat. Spoon 1/4 cup of cooked rice onto the center of each tortilla, followed by 1/4 cup of black beans.
- Add a layer of cooked shrimp on top of the rice and beans.
- Sprinkle about 2 tablespoons of shredded cheddar cheese over the shrimp, then add a dollop of sour cream, a couple of slices of avocado, and a tablespoon of salsa. Finish with a sprinkle of fresh cilantro.
