  • 8 ounces spaghetti or linguine
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon peanut butter
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds
  • 2 green onions, finely sliced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup shredded carrots
  • 1 cup snow peas, trimmed and halved

Instructions

  1. Fill a large pot with water and bring it to a boil over high heat. Add a pinch of salt to the water.
  2. Once the water is boiling, add the spaghetti or linguine. Cook according to the package instructions, usually 8-10 minutes, until al dente.
  3. While the pasta is cooking, prepare the sesame sauce. In a mixing bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, peanut butter, garlic, ginger, and red pepper flakes (if using) until smooth and well combined.
  4. Drain the cooked pasta in a colander and rinse under cold water to stop the cooking process. This helps to keep the noodles from sticking together and cools them down for easier handling.
  5. In a large mixing bowl, combine the cooked noodles, sauce, carrots, snow peas, and half of the sliced green onions. Use tongs to thoroughly toss the noodles and vegetables with the sauce, ensuring even coating.
  6. Transfer the sesame noodles to a serving dish. Sprinkle with sesame seeds and the remaining green onions on top. Tip: For extra flavor, lightly toast the sesame seeds in a dry pan over medium heat for 2-3 minutes until golden brown.
