Ingredients
- 1 lb cooked shrimp, peeled and deveined
- 8 oz cooked crab meat
- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1 avocado, diced
- 2 cups mixed salad greens
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Start by preparing the dressing. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined. Set aside.
- In a large mixing bowl, combine the cooked shrimp, crab meat, cherry tomatoes, cucumber, red onion, and avocado. Toss gently to combine. Be careful not to mash the avocado.
- Add the mixed greens to the bowl with the seafood mixture. Pour the dressing over the salad and gently toss to ensure everything is well coated with the dressing.
- Taste the salad and add more salt and pepper if necessary. Remember, the seafood may already have some saltiness, so adjust accordingly.
- Serve the seafood salad on a platter or individual plates, garnished with lemon wedges on the side for an extra burst of freshness.
- Tip: For an added crunch, you can sprinkle some crushed almonds or walnuts on top before serving.
