Ingredients
- 1 roll of store-bought pie crust
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 2 large eggs
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, warm up the olive oil.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and chopped spinach to the skillet, cooking until the spinach is wilted, about 2-3 minutes.
- Remove the skillet from heat and allow the mixture to cool slightly.
- In a large mixing bowl, combine the ricotta cheese, Parmesan cheese, and eggs. Mix well until smooth.
- Add the cooled spinach mixture to the cheese mixture and stir until fully combined. Season with nutmeg, salt, and pepper.
- Carefully unroll the pie crust and place it into a 9-inch pie pan. Trim any excess crust hanging over the edges.
