Ingredients

  • 2 pounds fresh mussels, scrubbed and debearded
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

  1. Rinse the mussels under cold water. Discard any mussels that are open and do not close when tapped.
  2. In a large pot or deep skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for 1 minute, stirring constantly, until golden brown. Be careful not to burn the garlic as it can become bitter.
  4. Pour in the white wine, salt, and black pepper. Bring the mixture to a simmer.
  5. Add the mussels to the pot. Cover with a lid and cook for 5 to 7 minutes, or until the mussels have opened. If any mussels do not open, discard them.
  6. Stir in the chopped parsley and toss the mussels in the sauce to evenly coat them.
  7. Transfer the mussels and sauce to a large bowl. Serve with lemon wedges on the side.
  8. Serve with crusty bread to soak up the delicious sauce. Make sure not to overcook the mussels, as they can become tough.
