Ingredients
- 2 pounds fresh mussels, scrubbed and debearded
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup dry white wine
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- Rinse the mussels under cold water. Discard any mussels that are open and do not close when tapped.
- In a large pot or deep skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1 minute, stirring constantly, until golden brown. Be careful not to burn the garlic as it can become bitter.
- Pour in the white wine, salt, and black pepper. Bring the mixture to a simmer.
- Add the mussels to the pot. Cover with a lid and cook for 5 to 7 minutes, or until the mussels have opened. If any mussels do not open, discard them.
- Stir in the chopped parsley and toss the mussels in the sauce to evenly coat them.
- Transfer the mussels and sauce to a large bowl. Serve with lemon wedges on the side.
- Serve with crusty bread to soak up the delicious sauce. Make sure not to overcook the mussels, as they can become tough.
