Ingredients
- 1 tablespoon olive oil
- 1 fennel bulb, thinly sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 4 sausages (preferably Italian)
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon fennel seeds
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh basil leaves, chopped
- Parmesan cheese, for serving (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add sliced fennel and onion. Cook for about 5 minutes, stirring occasionally, until they start to soften.
- Add the minced garlic to the skillet and sauté for another minute, until fragrant. Be careful not to burn the garlic as it can become bitter.
- Push the vegetables to one side of the skillet and add the sausages. Cook them, turning occasionally, until browned on all sides. This should take about 8-10 minutes.
- Add the diced tomatoes and fennel seeds to the skillet. Stir everything together and season with salt and freshly ground black pepper to taste.
- Cover the skillet and reduce the heat to low. Simmer for 15-20 minutes, or until the sausages are fully cooked through (internal temperature should be 160°F). Stir occasionally to prevent sticking.
- Before serving, sprinkle the dish with fresh basil leaves. Grate Parmesan cheese over the top, if desired, for extra flavor.
