Ingredients

  • 1 tablespoon olive oil
  • 1 fennel bulb, thinly sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 4 sausages (preferably Italian)
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon fennel seeds
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh basil leaves, chopped
  • Parmesan cheese, for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add sliced fennel and onion. Cook for about 5 minutes, stirring occasionally, until they start to soften.
  2. Add the minced garlic to the skillet and sauté for another minute, until fragrant. Be careful not to burn the garlic as it can become bitter.
  3. Push the vegetables to one side of the skillet and add the sausages. Cook them, turning occasionally, until browned on all sides. This should take about 8-10 minutes.
  4. Add the diced tomatoes and fennel seeds to the skillet. Stir everything together and season with salt and freshly ground black pepper to taste.
  5. Cover the skillet and reduce the heat to low. Simmer for 15-20 minutes, or until the sausages are fully cooked through (internal temperature should be 160°F). Stir occasionally to prevent sticking.
  6. Before serving, sprinkle the dish with fresh basil leaves. Grate Parmesan cheese over the top, if desired, for extra flavor.
