Ingredients

  • 1 cup dry green or brown lentils
  • 4 sausages (your choice: pork, beef, or chicken)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the lentils under cold water and pick out any debris or unwanted particles. Set them aside.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the sausages and cook until browned on all sides. This should take about 8-10 minutes. Transfer the sausages to a plate and set aside.
  3. In the same pot, add the diced onion, carrot, and celery. Cook these vegetables until they begin to soften, about 5 minutes. Stir occasionally.
  4. Add the minced garlic to the pot and cook for an additional minute until fragrant.
  5. Stir in the rinsed lentils, chicken or vegetable broth, thyme, and bay leaf. Bring everything to a gentle boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes.
  7. Add the browned sausages back into the pot. Continue to simmer for another 10 minutes or until the lentils are tender and sausages are cooked through.
  8. Season the dish with salt and pepper to taste. Remove the bay leaf before serving.
  9. Serve hot, garnished with fresh parsley if desired.
