Ingredients
- 1 cup dry green or brown lentils
- 4 sausages (your choice: pork, beef, or chicken)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Rinse the lentils under cold water and pick out any debris or unwanted particles. Set them aside.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the sausages and cook until browned on all sides. This should take about 8-10 minutes. Transfer the sausages to a plate and set aside.
- In the same pot, add the diced onion, carrot, and celery. Cook these vegetables until they begin to soften, about 5 minutes. Stir occasionally.
- Add the minced garlic to the pot and cook for an additional minute until fragrant.
- Stir in the rinsed lentils, chicken or vegetable broth, thyme, and bay leaf. Bring everything to a gentle boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes.
- Add the browned sausages back into the pot. Continue to simmer for another 10 minutes or until the lentils are tender and sausages are cooked through.
- Season the dish with salt and pepper to taste. Remove the bay leaf before serving.
- Serve hot, garnished with fresh parsley if desired.
