Ingredients
- 4 medium zucchinis
- 1 pound ground sausage
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 cup breadcrumbs
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis thoroughly and cut them in half lengthwise. Using a spoon, scoop out the seeds and a little flesh to create a hollow center in each zucchini. Be careful not to scoop too much, as you want the zucchini to hold its shape.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes. Stir frequently to prevent burning.
- Add the ground sausage to the skillet, breaking it apart with a spoon as it cooks. Cook until the sausage is browned and fully cooked, approximately 8-10 minutes. Drain any excess fat if necessary.
- Stir in the Italian seasoning, breadcrumbs, salt, and pepper. Mix well to ensure the seasoning is evenly distributed.
- Spoon the sausage mixture into the hollowed zucchinis, dividing equally among them. Gently press the filling down with the back of the spoon to ensure each zucchini is well packed.
- Place the stuffed zucchinis in a baking dish. Sprinkle the shredded mozzarella cheese evenly over each zucchini.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese on top is melted and golden brown.
- Remove from the oven and let the zucchinis sit for a few minutes before serving. This will help the stuffing to set slightly and make them easier to handle.
