Ingredients

  • 4 medium zucchinis
  • 1 pound ground sausage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis thoroughly and cut them in half lengthwise. Using a spoon, scoop out the seeds and a little flesh to create a hollow center in each zucchini. Be careful not to scoop too much, as you want the zucchini to hold its shape.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes. Stir frequently to prevent burning.
  4. Add the ground sausage to the skillet, breaking it apart with a spoon as it cooks. Cook until the sausage is browned and fully cooked, approximately 8-10 minutes. Drain any excess fat if necessary.
