Ingredients

  • 1 cup polenta
  • 4 cups water
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (sweet or spicy, as you prefer)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (15 oz) crushed tomatoes
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Start by making the polenta. Bring 4 cups of water and 1 teaspoon of salt to a boil in a medium saucepan. Gradually whisk in the polenta.
  2. Reduce the heat to low and continue whisking the polenta until it thickens, about 5 minutes, then cover and cook for an additional 25-30 minutes, stirring occasionally.
  3. When the polenta is creamy and tender, stir in 1 tablespoon of butter and 1/2 cup grated Parmesan cheese until well combined. Keep warm.
  4. While the polenta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 10 minutes. Remove the sausage from the skillet and set aside.
  5. In the same skillet, add the diced onion, minced garlic, and sliced red bell pepper. Sauté for about 5 minutes, or until the vegetables are tender.
  6. Stir in 1 teaspoon dried oregano, 1/2 teaspoon red pepper flakes (if using), and the can of crushed tomatoes. Season with salt and pepper to taste.
  7. Return the sausage to the skillet and simmer the mixture for about 10 minutes, allowing the flavors to meld and the sauce to thicken.
  8. To serve, spoon the creamy polenta onto plates and top with the sausage and tomato sauce mixture. Garnish with fresh basil leaves, if desired.
