Ingredients
- 1 cup polenta
- 4 cups water
- 1 teaspoon salt
- 1 tablespoon butter
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 pound Italian sausage (sweet or spicy, as you prefer)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (15 oz) crushed tomatoes
- Salt and pepper to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Start by making the polenta. Bring 4 cups of water and 1 teaspoon of salt to a boil in a medium saucepan. Gradually whisk in the polenta.
- Reduce the heat to low and continue whisking the polenta until it thickens, about 5 minutes, then cover and cook for an additional 25-30 minutes, stirring occasionally.
- When the polenta is creamy and tender, stir in 1 tablespoon of butter and 1/2 cup grated Parmesan cheese until well combined. Keep warm.
- While the polenta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 10 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, and sliced red bell pepper. Sauté for about 5 minutes, or until the vegetables are tender.
- Stir in 1 teaspoon dried oregano, 1/2 teaspoon red pepper flakes (if using), and the can of crushed tomatoes. Season with salt and pepper to taste.
- Return the sausage to the skillet and simmer the mixture for about 10 minutes, allowing the flavors to meld and the sauce to thicken.
- To serve, spoon the creamy polenta onto plates and top with the sausage and tomato sauce mixture. Garnish with fresh basil leaves, if desired.
