Ingredients
- 1 bunch of broccoli rabe (about 1 pound)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 pound Italian sausage (mild or spicy), casings removed
- 1/4 teaspoon red pepper flakes (optional)
- Salt, to taste
- Black pepper, to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Start by washing the broccoli rabe thoroughly. Trim off about an inch from the stems and discard any yellow leaves.
- Bring a large pot of salted water to a boil. Once boiling, add the broccoli rabe and cook for about 3-4 minutes until just tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to let the garlic burn.
- Add the sausage to the skillet. Use a wooden spoon to break it apart into smaller pieces. Cook for about 10 minutes until browned and fully cooked.
- Add the blanched broccoli rabe to the skillet with the sausage. Sprinkle with red pepper flakes for a bit of heat, if desired. Season with salt and black pepper to taste.
- Toss everything together and continue to cook for another 5 minutes, allowing the flavors to meld.
- Transfer the sausage and broccoli rabe to a serving dish, and sprinkle with grated Parmesan cheese before serving.
