Ingredients

  • 1 bunch of broccoli rabe (about 1 pound)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Start by washing the broccoli rabe thoroughly. Trim off about an inch from the stems and discard any yellow leaves.
  2. Bring a large pot of salted water to a boil. Once boiling, add the broccoli rabe and cook for about 3-4 minutes until just tender. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to let the garlic burn.
  4. Add the sausage to the skillet. Use a wooden spoon to break it apart into smaller pieces. Cook for about 10 minutes until browned and fully cooked.
  5. Add the blanched broccoli rabe to the skillet with the sausage. Sprinkle with red pepper flakes for a bit of heat, if desired. Season with salt and black pepper to taste.
  6. Toss everything together and continue to cook for another 5 minutes, allowing the flavors to meld.
  7. Transfer the sausage and broccoli rabe to a serving dish, and sprinkle with grated Parmesan cheese before serving.
