Ingredients
- 1 lb salted cod
- 3 medium potatoes, peeled and sliced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- 1 teaspoon black pepper
- 1 handful fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- Place the salted cod in a large bowl and cover with cold water. Let it soak for 24-48 hours, changing the water every 8 hours to remove excess salt.
- After soaking, taste a small piece of the cod to ensure the salt content is to your liking. Adjust soaking time if necessary.
- Preheat your oven to 375°F (190°C).
- In a large pot, bring water to a boil. Add the sliced potatoes and cook for about 10 minutes until just tender. Drain and set aside.
- In a skillet over medium heat, add olive oil. Once hot, add the sliced onion and sauté until translucent, about 5 minutes.
- Add minced garlic to the onions and cook for another 1-2 minutes until fragrant. Be careful not to burn the garlic.
- Gently fold in the boiled potatoes, ensuring they are well coated with the onion and garlic mixture. Season with black pepper.
- Flake the soaked salted cod into bite-sized pieces. Ensure any remaining skin or bones are removed.
- Layer the potato mixture in a baking dish, and top with the flaked cod pieces spread evenly.
- Bake in the preheated oven for 25-30 minutes, until the cod is cooked through and slightly golden on top.
- Remove from the oven and garnish with chopped parsley and lemon wedges.
- Serve hot. Tip: If the cod seems dry after baking, drizzle a bit more of olive oil before serving.
