Ingredients

  • 1 lb salted cod
  • 3 medium potatoes, peeled and sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon black pepper
  • 1 handful fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

  1. Place the salted cod in a large bowl and cover with cold water. Let it soak for 24-48 hours, changing the water every 8 hours to remove excess salt.
  2. After soaking, taste a small piece of the cod to ensure the salt content is to your liking. Adjust soaking time if necessary.
  3. Preheat your oven to 375°F (190°C).
  4. In a large pot, bring water to a boil. Add the sliced potatoes and cook for about 10 minutes until just tender. Drain and set aside.
  5. In a skillet over medium heat, add olive oil. Once hot, add the sliced onion and sauté until translucent, about 5 minutes.
  6. Add minced garlic to the onions and cook for another 1-2 minutes until fragrant. Be careful not to burn the garlic.
  7. Gently fold in the boiled potatoes, ensuring they are well coated with the onion and garlic mixture. Season with black pepper.
  8. Flake the soaked salted cod into bite-sized pieces. Ensure any remaining skin or bones are removed.
  9. Layer the potato mixture in a baking dish, and top with the flaked cod pieces spread evenly.
  10. Bake in the preheated oven for 25-30 minutes, until the cod is cooked through and slightly golden on top.
  11. Remove from the oven and garnish with chopped parsley and lemon wedges.
  12. Serve hot. Tip: If the cod seems dry after baking, drizzle a bit more of olive oil before serving.
