Ingredients
- 1 pound large shrimp, peeled and deveined, tails on
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon white pepper
- 1/4 cup vegetable oil
- 2 cloves garlic, minced
- 2 green onions, thinly sliced
- 1 small red chili, sliced (optional, for heat)
- 1 tablespoon soy sauce
Instructions
- In a mixing bowl, combine the cornstarch, salt, black pepper, and white pepper. Add the shrimp and toss until evenly coated. This coating will help the shrimp become crispy when cooked.
- Heat the vegetable oil in a wok or large frying pan over medium-high heat until it’s shimmering and hot, but not smoking. Tip: To test if the oil is ready, drop a small piece of the coated shrimp into the oil. If it sizzles immediately, the oil is ready.
- Carefully add the shrimp to the hot oil in a single layer. Cook the shrimp for about 2-3 minutes per side, or until they turn golden brown and crispy. Use a slotted spoon to turn them halfway through cooking.
- Once cooked, use the slotted spoon to transfer the shrimp to a plate lined with paper towels to drain any excess oil.
- In the same pan, remove any excess oil, leaving about 1 tablespoon. Reduce the heat to medium and add the minced garlic, sliced green onions, and red chili (if using). Stir-fry for about 30-40 seconds, or until fragrant.
- Return the shrimp to the pan and pour in the soy sauce. Toss everything together until the shrimp are well coated, and everything is well combined, about 1 minute.
- Serve the shrimp hot as an appetizer or over steamed rice for a complete meal.
