  • 1 lb (450g) pork tenderloin, cut into thin strips
  • 1/2 cup cornstarch
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon white pepper
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 red chili, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 tablespoon soy sauce
  • Vegetable oil for frying

Instructions

  1. Begin by preparing the pork. Cut the pork tenderloin into thin strips, about 1/2 inch wide. Try to make the pieces as uniform as possible for even cooking.
  2. In a large bowl, mix together the cornstarch, salt, and both peppers. Add the pork strips and toss until they are evenly coated. The cornstarch will help create a crispy texture when fried.
  3. Heat a substantial amount of vegetable oil in a deep frying pan or wok over medium-high heat to 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping a small piece of bread in it; it should sizzle and turn golden in about 15 seconds.
  4. Working in batches, fry the pork strips in the hot oil until crispy and cooked through, about 3-4 minutes per batch. Avoid overcrowding the pan to keep the oil temperature consistent. Remove pork from oil and drain on paper towels.
  5. In a separate large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds, being careful not to burn it.
