- 1 lb (450g) pork tenderloin, cut into thin strips
- 1/2 cup cornstarch
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 teaspoon white pepper
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1 red chili, thinly sliced
- 1 bell pepper, thinly sliced
- 1 tablespoon soy sauce
- Vegetable oil for frying
Instructions
- Begin by preparing the pork. Cut the pork tenderloin into thin strips, about 1/2 inch wide. Try to make the pieces as uniform as possible for even cooking.
- In a large bowl, mix together the cornstarch, salt, and both peppers. Add the pork strips and toss until they are evenly coated. The cornstarch will help create a crispy texture when fried.
- Heat a substantial amount of vegetable oil in a deep frying pan or wok over medium-high heat to 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping a small piece of bread in it; it should sizzle and turn golden in about 15 seconds.
- Working in batches, fry the pork strips in the hot oil until crispy and cooked through, about 3-4 minutes per batch. Avoid overcrowding the pan to keep the oil temperature consistent. Remove pork from oil and drain on paper towels.
- In a separate large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds, being careful not to burn it.
- Add the sliced green onions, red chili, and bell pepper to the skillet. Stir-fry for about 2 minutes until they begin to soften.
- Add the fried pork strips to the skillet and stir everything together. Drizzle with soy sauce and toss to combine thoroughly. Cook for another 1-2 minutes so the flavors meld.
