Ingredients

  • 1 (4-pound) leg of lamb
  • 6 cloves garlic, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste
  • 1 lemon, juiced

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Make sure the oven rack is positioned in the center of the oven.
  2. Pat the lamb dry with paper towels. This helps the outer layer to crisp up nicely.
  3. Use a sharp knife to make several small cuts into the lamb, about 1 inch deep. Insert a slice of garlic into each cut. This will infuse the lamb with a lovely garlic flavor.
  4. In a small bowl, mix together olive oil, rosemary, thyme, salt, and pepper. Rub this mixture all over the lamb to create a flavorful crust as it roasts.
  5. Place the lamb in a roasting pan. Squeeze lemon juice over it and pour any residual oil and herb mixture over the top.
  6. Roast the lamb in the preheated oven for about 1 hour and 30 minutes. This is for medium-rare; use a meat thermometer to check for an internal temperature of 135 degrees Fahrenheit (57 degrees Celsius). For other preferred doneness, adjust time and temperature accordingly.
  7. Once done, remove the lamb from the oven and cover it loosely with aluminum foil. Allow it to rest for about 15 minutes before carving. This resting period helps the juices redistribute throughout the meat.
  8. Carve the lamb into thin slices and arrange on a serving platter. Serve warm.
