Ingredients
- 1 (3-pound) beef roast (such as top sirloin or eye of round)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon Dijon mustard
Instructions
- Preheat your oven to 350°F (175°C).
- Place the beef roast on a clean cutting board. Using a sharp knife, make shallow slits all over the surface of the roast. These slits will help the seasoning penetrate the meat for enhanced flavor.
- In a small bowl, combine the olive oil, minced garlic, chopped rosemary, salt, pepper, and Dijon mustard. Mix well to form a paste.
- Rub the seasoning paste all over the beef roast, making sure to get it into the slits. This will ensure a flavorful outer crust.
- Heat a large oven-safe skillet over medium-high heat. Place the seasoned roast in the skillet and sear for about 4-5 minutes on each side until browned. Don’t rush this step, as a good sear adds depth to the final dish.
- Once the roast is seared on all sides, transfer the skillet to the preheated oven.
- Roast the beef in the oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium rare. Use a meat thermometer for accuracy.
- Once done, remove the roast from the oven and let it rest on a cutting board for at least 10 minutes. Resting allows the juices to redistribute, making the meat more tender and juicy.
