Ingredients

  • 8 corn tortillas
  • 2 tablespoons vegetable oil
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (7 ounces) huitlacoche
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup Oaxaca cheese, grated
  • 1 jalapeño pepper, sliced (optional)
  • Fresh cilantro for garnish
  • Sour cream, to serve (optional)

Instructions

  1. Place a non-stick skillet on the stove over medium heat and add 1 tablespoon of vegetable oil.
  2. Add the chopped onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  3. Reduce heat to medium-low and add the huitlacoche, salt, and black pepper. Stir and let cook for about 5 minutes, allowing the flavors to meld together.
  4. Remove the huitlacoche mixture from the skillet and set aside. Wipe the skillet with a paper towel to remove any residues.
  5. Add the remaining tablespoon of vegetable oil to the skillet and heat over medium flame.
  6. Place one corn tortilla in the skillet. Spread about 2 tablespoons of the huitlacoche mixture on one half of the tortilla. Sprinkle with grated Oaxaca cheese and a few jalapeño slices, if using.
  7. Fold the tortilla over to encase the filling and cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is golden brown.
  8. Repeat the process with remaining tortillas, adding more oil to the skillet if necessary.
  9. Serve the quesadillas warm, garnished with fresh cilantro and a dollop of sour cream if desired.
