Ingredients
- 8 corn tortillas
- 2 tablespoons vegetable oil
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (7 ounces) huitlacoche
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup Oaxaca cheese, grated
- 1 jalapeño pepper, sliced (optional)
- Fresh cilantro for garnish
- Sour cream, to serve (optional)
Instructions
- Place a non-stick skillet on the stove over medium heat and add 1 tablespoon of vegetable oil.
- Add the chopped onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
- Reduce heat to medium-low and add the huitlacoche, salt, and black pepper. Stir and let cook for about 5 minutes, allowing the flavors to meld together.
- Remove the huitlacoche mixture from the skillet and set aside. Wipe the skillet with a paper towel to remove any residues.
- Add the remaining tablespoon of vegetable oil to the skillet and heat over medium flame.
- Place one corn tortilla in the skillet. Spread about 2 tablespoons of the huitlacoche mixture on one half of the tortilla. Sprinkle with grated Oaxaca cheese and a few jalapeño slices, if using.
- Fold the tortilla over to encase the filling and cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is golden brown.
- Repeat the process with remaining tortillas, adding more oil to the skillet if necessary.
- Serve the quesadillas warm, garnished with fresh cilantro and a dollop of sour cream if desired.
