Ingredients

  • A large skillet with a lid

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Pat the pork chops dry with paper towels, then season both sides with salt and black pepper.
  2. Add the pork chops to the hot skillet and cook for about 4-5 minutes on each side, or until they are nicely browned. Remove the pork chops from the skillet and set aside on a plate.
  3. In the same skillet, add the remaining tablespoon of olive oil if necessary, and lower the heat to medium. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for about 5 minutes, until the onions are softened and translucent.
  4. Add the apple slices to the skillet with the onions. Cook until the apples start to soften, about 2-3 minutes. Stir frequently to prevent sticking.
  5. Pour the apple cider into the skillet, stirring well to scrape up any browned bits from the bottom of the skillet. Mix in the Dijon mustard and thyme leaves. Let the mixture come to a gentle simmer.
  6. Return the pork chops to the skillet along with any accumulated juices on the plate. Nestle them among the apples and onions. Cover the skillet with a lid.
  7. Cook the pork chops in the simmering apple mixture for about 10-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  8. Once cooked, remove the pork chops from the skillet. Increase the heat slightly to let the sauce reduce for another 5 minutes, or until slightly thickened.
  9. Stir in the butter to add richness to the sauce. Taste and adjust the seasoning if necessary before serving.
  10. Serve the pork chops with the apple-onion mixture spooned over top. Enjoy with mashed potatoes or roasted vegetables for a comforting meal.
