Ingredients
- 2 lbs pork shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 4 medium potatoes, peeled and cubed
- 2 carrots, sliced
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons all-purpose flour
- 2 tablespoons cold water
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the pork cubes and brown them on all sides, about 8 minutes.
- Remove the browned pork and set aside. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
- Return the pork to the pot. Add chicken broth, water, potatoes, carrots, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat to low, and cover.
- Simmer the stew for about 1 hour or until the pork is tender and the potatoes are soft, stirring occasionally.
- In a small bowl, mix flour and cold water to create a slurry. Stir the slurry into the stew to thicken it, cooking for an additional 10 minutes.
- Remove the bay leaves before serving. Taste and adjust seasoning if necessary.
- Garnish with fresh parsley and serve hot.
