Ingredients

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold water
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the pork cubes and brown them on all sides, about 8 minutes.
  2. Remove the browned pork and set aside. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Return the pork to the pot. Add chicken broth, water, potatoes, carrots, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat to low, and cover.
  4. Simmer the stew for about 1 hour or until the pork is tender and the potatoes are soft, stirring occasionally.
  5. In a small bowl, mix flour and cold water to create a slurry. Stir the slurry into the stew to thicken it, cooking for an additional 10 minutes.
  6. Remove the bay leaves before serving. Taste and adjust seasoning if necessary.
  7. Garnish with fresh parsley and serve hot.
