Ingredients

  • 1 pound pork tenderloin, sliced into 1/4-inch thick medallions
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tablespoon capers, rinsed and drained
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place the pork medallions between sheets of plastic wrap and gently pound with a meat mallet to 1/8 inch thick.
  2. In a shallow dish, mix the flour, salt, and pepper. Dredge each pork slice in the flour mixture, shaking off the excess.
  3. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Cook the pork for about 2 minutes on each side until golden brown and cooked through. Transfer to a plate.
  4. Add chicken broth, lemon juice, and capers to the skillet. Bring to a simmer, scraping up the browned bits from the bottom of the pan. Simmer for 2 minutes.
  5. Return the pork to the skillet and simmer for 1 minute to heat through. Stir in the remaining 1 tablespoon butter for added richness.
  6. Sprinkle the dish with fresh parsley before serving. Serve with additional lemon wedges if desired.
