Ingredients

  • 2 tablespoons olive oil
  • 1 pound pork sausages
  • 1 medium onion, thinly sliced
  • 1 garlic clove, minced
  • 1 small head of cabbage, core removed and shredded
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon caraway seeds
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork sausages. Cook for 6-8 minutes, turning occasionally, until they are browned on all sides.
  2. Remove the sausages from the skillet and set aside on a plate. Reduce the heat to medium and add the sliced onion to the same skillet. Sauté for 3-4 minutes until the onion becomes soft and translucent.
  3. Add the minced garlic to the onions and sauté for another 1 minute until fragrant.
  4. Add the shredded cabbage to the skillet and stir to combine with the onion and garlic. Cook for 5-7 minutes, stirring occasionally, until the cabbage begins to wilt.
  5. Pour in the chicken broth and apple cider vinegar. Sprinkle in the caraway seeds, and add salt and pepper to taste. Stir everything together.
  6. Return the sausages to the skillet, nestling them into the cabbage mixture. Cover the skillet with a lid, reduce the heat to low, and simmer for 20 minutes, until the sausages are cooked through and the cabbage is tender.
  7. Remove the lid and increase the heat to medium-high. Cook for an additional 5 minutes to reduce the liquid in the skillet slightly.
