Ingredients
- 8 pork sausages
- 1 tablespoon olive oil
- 2 medium onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup red wine
- 1 cup beef stock
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt, to taste
- Black pepper, to taste
Instructions
- In a large skillet or frying pan, heat the olive oil over medium heat. Add the pork sausages and cook until browned on all sides, about 8-10 minutes. Remove the sausages from the skillet and set them aside.
- In the same skillet, add the sliced onions. Cook over medium heat, stirring frequently, until the onions are soft and translucent, approximately 5 minutes.
- Add the minced garlic to the onions and cook for an additional 1-2 minutes, until fragrant. Be careful not to burn the garlic as it can become bitter.
- Pour in the red wine and beef stock. Stir in the tomato paste and dried thyme. Season with salt and black pepper. Increase the heat to high and bring the mixture to a boil.
- Once boiling, return the sausages to the skillet. Cover with a lid, reduce the heat to low, and let simmer for 30 minutes. Stir occasionally to ensure the sausages are coated in the sauce.
- After simmering, remove the lid and let the sauce reduce for an additional 10 minutes if it is too thin. This will intensify the flavors.
- Taste and adjust the seasoning with more salt and pepper if needed. Serve hot with mashed potatoes or crusty bread to soak up the delicious sauce.
- Tip: For a sweeter taste, add a teaspoon of sugar to the red wine sauce before simmering.
