Ingredients
- 3-pound boneless pork loin roast
- 5 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 350°F (175°C). This is the ideal cooking temperature to ensure your pork roast is tender and juicy.
- Place the pork roast on a cutting board and use a sharp knife to make several small slits all over the roast. This will help the flavors from the garlic and herbs to penetrate the meat.
- In a small bowl, combine the minced garlic, olive oil, salt, black pepper, rosemary, thyme, and paprika. Mix well to create a thick paste.
- Using your hands or a small spatula, rub the garlic mixture evenly over the entire surface of the pork roast. Make sure to push some of the garlic mixture into the slits you made earlier.
- Line a roasting pan with aluminum foil for easy cleanup. Place the seasoned pork roast in the center of the pan.
- Cover the pan loosely with another piece of foil to prevent the garlic from burning. Place the pan in the preheated oven.
- Roast the pork for about 1 hour and 20 minutes, or until a meat thermometer inserted into the thickest part of the roast reads 145°F (63°C). Rotating the pan midway through cooking helps ensure even cooking.
- Tips: If you do not have a meat thermometer, cut into the center of the roast to check doneness; it should be slightly pink in the center.
- Let the roast rest for at least 10 minutes before slicing. This allows the juices to redistribute, making the meat more tender.
- Slice the pork roast into 1/2-inch thick slices and serve with your choice of sides. Mashed potatoes or roasted vegetables make a great accompaniment.
