Ingredients

  • 2 cups cooked white rice (preferably day-old and cold)
  • 1/2 pound pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 4 green onions, sliced (white and green parts separated)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Salt, to taste
  • Black pepper, to taste
  • Optional: chopped cilantro or additional green onion for garnish

Instructions

  1. In a medium bowl, combine the sliced pork with 1 tablespoon of soy sauce. Set aside to marinate while you prepare the rest of the ingredients.
  2. Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the beaten eggs and cook, stirring gently, until they are fully set. Remove eggs from the skillet and set aside.
  3. Add the remaining tablespoon of vegetable oil to the skillet. Increase the heat to high and add the marinated pork in a single layer. Cook, stirring occasionally, until browned and cooked through, about 4-5 minutes. Remove pork from the skillet and set aside.
  4. In the same skillet, add the white parts of the green onions, garlic, and ginger. Sauté for 1 minute until fragrant.
  5. Add the peas and carrots to the skillet, stirring to combine. Cook for 2-3 minutes until the vegetables are heated through.
  6. Add the cold rice to the skillet, breaking up any clumps with a spatula and mixing well with the vegetables. Pour the remaining 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce over the rice, stirring to evenly distribute.
  7. Return the cooked pork and eggs to the skillet, stirring to combine all ingredients. Add sesame oil, salt, and black pepper to taste, stirring everything together over high heat until well mixed and heated through.
  8. Serve the pork fried rice hot, garnished with the reserved green onion tops and optional chopped cilantro if desired.
