Ingredients

  • 4 boneless pork cutlets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the pork cutlets with salt and pepper on both sides.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and sizzling, add the pork cutlets.
  3. Cook the pork cutlets for 3-4 minutes on each side until golden brown and cooked through. Remove them from the skillet and set aside.
  4. In the same skillet, add the sliced onion and cook for 2 minutes until slightly softened. Add minced garlic and mushrooms, and cook for an additional 5 minutes.
  5. Pour chicken broth into the skillet and bring to a simmer, scraping up any flavorful brown bits from the bottom of the skillet.
  6. Add the heavy cream and dried thyme to the skillet, stirring to combine. Simmer for 5-7 minutes until the sauce thickens slightly.
  7. Return the pork cutlets to the skillet, nestling them into the sauce. Cook for an additional 5 minutes to warm the pork and infuse them with the sauce flavors.
  8. Taste the sauce and adjust seasoning with more salt and pepper if necessary. Serve hot, garnished with fresh parsley if desired.
