Ingredients
- 4 boneless pork cutlets
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 large onion, sliced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Season the pork cutlets with salt and pepper on both sides.
- Heat olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and sizzling, add the pork cutlets.
- Cook the pork cutlets for 3-4 minutes on each side until golden brown and cooked through. Remove them from the skillet and set aside.
- In the same skillet, add the sliced onion and cook for 2 minutes until slightly softened. Add minced garlic and mushrooms, and cook for an additional 5 minutes.
- Pour chicken broth into the skillet and bring to a simmer, scraping up any flavorful brown bits from the bottom of the skillet.
- Add the heavy cream and dried thyme to the skillet, stirring to combine. Simmer for 5-7 minutes until the sauce thickens slightly.
- Return the pork cutlets to the skillet, nestling them into the sauce. Cook for an additional 5 minutes to warm the pork and infuse them with the sauce flavors.
- Taste the sauce and adjust seasoning with more salt and pepper if necessary. Serve hot, garnished with fresh parsley if desired.
