Ingredients
- 1 lb pork tenderloin
- 2 large onions, thinly sliced
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon brown sugar
- 1 teaspoon balsamic vinegar
- 4 hoagie rolls or sandwich buns
- 4 tablespoons mayonnaise
- 4 slices of provolone cheese
- Lettuce leaves (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking dish with aluminum foil for easy cleanup.
- Season the pork tenderloin with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place it in the baking dish.
- Bake the pork in the preheated oven for 25-30 minutes or until it reaches an internal temperature of 145°F (63°C). Let it rest for at least 5 minutes before slicing.
- While the pork is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and sauté for about 5 minutes.
- Add 1 teaspoon of salt, the remaining 1/4 teaspoon of black pepper, brown sugar, and balsamic vinegar to the onions. Stir well and cook for another 10-15 minutes or until the onions are caramelized and golden brown. Stir occasionally.
- Stir the onions often to prevent them from sticking or burning. Caramelizing onions takes time and patience for the perfect taste and texture.
- Slice the rested pork tenderloin thinly against the grain to ensure tenderness.
- To assemble the sandwiches, slice the hoagie rolls in half and toast them lightly if desired.
- Spread 1 tablespoon of mayonnaise on the bottom half of each roll, then layer with sliced pork, caramelized onions, and a slice of provolone cheese.
- Top each sandwich with lettuce leaves if using, then close with the top half of the roll.
- For a warm, melted finish, place the assembled sandwiches on a baking sheet and return them to the oven for about 3-5 minutes, until the cheese melts.
