Ingredients

  • 1 lb pork tenderloin
  • 2 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon balsamic vinegar
  • 4 hoagie rolls or sandwich buns
  • 4 tablespoons mayonnaise
  • 4 slices of provolone cheese
  • Lettuce leaves (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking dish with aluminum foil for easy cleanup.
  2. Season the pork tenderloin with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place it in the baking dish.
  3. Bake the pork in the preheated oven for 25-30 minutes or until it reaches an internal temperature of 145°F (63°C). Let it rest for at least 5 minutes before slicing.
  4. While the pork is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and sauté for about 5 minutes.
  5. Add 1 teaspoon of salt, the remaining 1/4 teaspoon of black pepper, brown sugar, and balsamic vinegar to the onions. Stir well and cook for another 10-15 minutes or until the onions are caramelized and golden brown. Stir occasionally.
  6. Stir the onions often to prevent them from sticking or burning. Caramelizing onions takes time and patience for the perfect taste and texture.
  7. Slice the rested pork tenderloin thinly against the grain to ensure tenderness.
  8. To assemble the sandwiches, slice the hoagie rolls in half and toast them lightly if desired.
  9. Spread 1 tablespoon of mayonnaise on the bottom half of each roll, then layer with sliced pork, caramelized onions, and a slice of provolone cheese.
  10. Top each sandwich with lettuce leaves if using, then close with the top half of the roll.
  11. For a warm, melted finish, place the assembled sandwiches on a baking sheet and return them to the oven for about 3-5 minutes, until the cheese melts.
