Ingredients

  • 2 tablespoons olive oil
  • 1 pound pork shoulder, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (15 ounces) diced tomatoes, with juice
  • 4 cups chicken broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add pork shoulder cubes and brown on all sides, about 5 minutes.
  2. Remove the pork from the pot and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
  3. Return pork to the pot. Add the diced tomatoes with their juice, chicken broth, cannellini beans, salt, pepper, thyme, and bay leaf. Stir to combine.
  4. Bring soup to a boil. Reduce heat to low, cover, and let simmer for 1 hour or until pork is tender and flavors have melded.
  5. Remove bay leaf before serving. Stir in fresh parsley and taste to adjust the seasoning if necessary.
