Ingredients
- 2 tablespoons olive oil
- 1 pound pork shoulder, cut into 1-inch cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 can (15 ounces) diced tomatoes, with juice
- 4 cups chicken broth
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium-high heat. Add pork shoulder cubes and brown on all sides, about 5 minutes.
- Remove the pork from the pot and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
- Return pork to the pot. Add the diced tomatoes with their juice, chicken broth, cannellini beans, salt, pepper, thyme, and bay leaf. Stir to combine.
- Bring soup to a boil. Reduce heat to low, cover, and let simmer for 1 hour or until pork is tender and flavors have melded.
- Remove bay leaf before serving. Stir in fresh parsley and taste to adjust the seasoning if necessary.
