Ingredients

  • 1 whole chicken (about 3-4 lbs), cut into pieces
  • 2 tablespoons vegetable oil
  • 1 pound tomatillos, husked and rinsed
  • 2-3 serrano peppers, stems removed
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup pumpkin seeds, toasted
  • 2 garlic cloves, peeled
  • 1 small white onion, quartered
  • 2 cups chicken broth
  • Salt and black pepper to taste
  • Cooked rice, for serving (optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with aluminum foil.
  2. Place the tomatillos and serrano peppers on the prepared baking sheet. Roast them in the preheated oven for about 15-20 minutes or until they are softened and slightly charred. This step adds depth to the flavor. Allow them to cool slightly.
  3. While the tomatillos and peppers cool, heat the vegetable oil in a large pot over medium heat.
  4. Season the chicken pieces generously with salt and black pepper. Using tongs, brown the chicken pieces in batches in the heated oil, ensuring both sides are golden brown. Remove the chicken and set aside.
  5. In a blender, combine the roasted tomatillos, serrano peppers, cilantro, parsley, pumpkin seeds, garlic, onion, and 1 cup of the chicken broth. Blend until smooth. This is your mole verde sauce.
  6. Return the browned chicken pieces to the pot. Pour the mole verde sauce over the chicken, and add the remaining chicken broth to ensure the chicken is mostly submerged.
  7. Bring the mixture to a gentle simmer over medium-low heat. Cover the pot and let it cook for 35-40 minutes, ensuring the chicken is cooked through and tender. Stir occasionally to prevent sticking. If the sauce becomes too thick, add a bit more broth or water.
  8. Taste the sauce and adjust the seasoning with more salt and pepper, if needed.
  9. Serve the Pollo en Mole Verde hot with cooked rice on the side, if desired. Enjoy!
