Ingredients

  • 4 chicken quarters (legs and thighs)
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1 tablespoon white vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, sliced
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. In a large mixing bowl, combine minced garlic, olive oil, orange juice, lime juice, white vinegar, ground cumin, paprika, oregano, salt, and black pepper. Whisk together until well blended.
  2. Place the chicken quarters in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken. Add the sliced onion. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for more flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top. This will allow the heat to circulate around the chicken, ensuring even cooking.
  5. Remove the chicken from the marinade and place it on the wire rack, skin side up. Discard the marinade. Bake in the preheated oven for about 1 hour or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.
