- 4 chicken quarters (legs and thighs)
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1 tablespoon white vinegar
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 medium onion, sliced
- 1/4 cup chopped fresh cilantro for garnish
Instructions
- In a large mixing bowl, combine minced garlic, olive oil, orange juice, lime juice, white vinegar, ground cumin, paprika, oregano, salt, and black pepper. Whisk together until well blended.
- Place the chicken quarters in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken. Add the sliced onion. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for more flavor.
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top. This will allow the heat to circulate around the chicken, ensuring even cooking.
